Tasty alternative to coconut flakes

Organic Gemini Sliced Tigernut snack

This bag of Tigernuts has been seating in my pantry for 2 years. I was afraid it would taste like cardboard, but today I decided to roast it and sprinkle cinnamon. I ate the whole thing in 15 minutes.

My plan was to shred it like coconut flakes and use it in baked goods as a substitute for coconut. Turns out that this root vegetable is an excellent snack choice as it tastes mildly sweet, has a nice crunch when toasted and is a great source of prebiotic fiber.

 3 oz Organic Gemini sliced tigernuts (from Vitacost or Amazon)
 1 pinch cinnamon powder
 1 pinch sea salt

Spread tigernuts in oven-safe tray (I use lids from Chipotle bowls)

Heat oven or toaster oven to 350 F

Toast for about 15 minutes

Top with cinnamon and salt
